Abstract

This article answers some questions about the garun, a kind of souse prepared by marinating entrails of certain fish until their decomposition ―its origin,
uses and properties―. Above all, it deals with some topics that help us understand why this souse became so appreciated by the Romans as well as by other people who lived in the Mediterranean valley in ancient times.
